Preservative in food, feed, pharmaceutical, dye and etc.
Antiseptic, intermediate in pharmaceutical industry.
Comparison of sodium benzoate and Benzoic Acid:
Same effect with Benzoic acid, but sodium benzoate has bigger solubility in water, better stability in air and better inhibition of yeast and bacteria, so sodium benzoate is more popular.
Benzoic acid and sodium benzoate both are applicated in high protein food, the preservative ability are the same, but the the dosage of sodium benzoate is 1.2 times of benzoic acid.
Comparison of sodium benzoate and potassium sorbate:
Advantages of sodium benzoate:
- Price is about 1/3 of potassium sorbate
- More stable in the air
Disadvantages of sodium Benzoate:
- Higher toxicity, about 5 times of potassium sorbate
- Benzoic acid and sodium benzoate are not suggested in meat product

Sodium benzoate is suggested to be used in fish products, high acid fruit, high acid jam, beverages, the pH value of the surroundings can not be higher than 4.5.
Sodium benzoate is not allowed to be used in meat products.
